 These are verdal olives. The entire Montirius team picks them by hand from the first frosts in early November.
 Whole olives are ground, crushed the old-fashioned way between two stone millstones. They may be a little cloudy because they aren't centrifuged, so they retain all their vitamin A, which is so good for our health!
